KDU Hospitality And Culinary Students Soar At The FHM Culinaire 2017 By Clinching 28 Awards

 
The Guild Culinary Team with a motto ‘Fortune Favours the Brave’ not only bagged 1 gold, 7 silver, 4 bronze medals and 15 diplomas in total at the FHM Culinaire 2017 competition but also won a ‘Worldchefs President Ambassador Liaison Asia Award’ for KDU.  Believing in yourself and bravely stand out with your skills and knowledge, this is what KDU students have been instilled in the School of Hospitality, Tourism and Culinary Arts (SHTCA) at KDU University College. The medalists of the FHM Culinaire 2017 competition proudly celebrate their achievement at KDU’s main campus in Utropolis Glenmarie, Shah Alam.  Chef Muhammad Edwan bin Shaharir (right) a.k.a Chef Eddie next to his student is indeed amazed at the achievement of gold and silver double medalist Johan Sebastian Chee, a Bachelor of Culinary Management student in SHTCA. 
 
Believing in challenges will sharpen one’s wits and upgrade one’s skills, 15 students from the School of Hospitality, Tourism and Culinary Arts (SHTCA) at KDU University College, had proven their excellent capability by clinching 28 awards from Culinaire Malaysia 2017, a competition held in conjunction with the Food and Hotel Malaysia (FHM) 2017 exhibition, which spanned from 26 to 29 September 2017 at Kuala Lumpur Convention Centre.

By forming up ‘The Guild Culinary Team’ with a motto ‘Fortune Favours the Brave’, these students who study in Bachelor of Hospitality Management (Hons), Culinary Management (Hons) and also Diploma of Culinary Arts programmes, have proudly brought back 1 gold, 7 silver, 4 bronze medals and 15 diplomas in total. On top of that, there was also the ‘Worldchefs President Ambassador Liaison Asia Award’ for KDU!

In those four days competition, The Guild Culinary Team had gone through a nerve-wracking atmosphere in KLCC, posed by over 1,500 entries and an assemblage of more than 1,000 culinary professionals of over 10 countries, competed in 34 categories for the prestige gold.

In spite of that, the courageous shown by KDU students to participate and compete in the open class categories had indeed impressed their chef lecturers, as this shows that they were actually ready to compete against industry veterans.

“Our students stood out because they were brave and daring, FHM 2017 was a good Launchpad to field and establish the team. The idea was to showcase what our students are capable of, henceforth sending the message to the whole country that we are indeed excellent in what we do,” described Chef Muhammad Edwan bin Shaharir a.k.a Chef Eddie to his students, KDU’s SHTCA lecturer who took up the role as the Head Trainer in charge of KDU’s contingent for this large-scale competition.
 
Prior to the actual competition, students who showed potential, dedication and passion had been scouted within all to form up this team. Upon the completion of the menu and dish plating designs by their Head Trainer, they underwent one-on-one training sessions, under observation of their chef lecturer - Chef Hamirudin bin Nazir as well, to refine each and every cooking techniques on individual dishes with replication manner.

Participating in different cooking and coffee making competition classes, the team met competitors made up of a half and half mix of diploma and degree students from education institution all over the country.

For Johan Sebastian Chee, a Bachelor of Culinary Management student who won a gold medal for the individual duck main course category and a silver for the individual seafood category, this was an achievement through an intensive 3 months training, practice sessions and real-time simulation all done systematically to invoke actual competition scenarios.

“This awards means a lot on a personal and professional level as this reaffirms my dedication to my craft. Without the guidance, advice and motivation of Chef Eddie and Chef Hamirudin providing valuable insights in not only scrutinizing each and every individual component of each dish in order to obtain the perfect plate, all of this would have been futile. The collaborative efforts between lecturers and students made this all possible,” enthused Johan.

Sylvia Chandra, who study in the same programme achieved a bronze medal for the seafood main course category and a silver medal for meat/poultry category opined, “Our chef lecturers have given us a lot of suggestions and idea to improve our dishes, these awards meant an achievement for me to show that KDU University College, especially the lecturers, has taught and guided me well in the culinary world!” Her coursemate Gavin Tan Kar Hou who won a bronze medal for seafood dish chimed in, “I really would like to thank Chef Eddie for giving me the opportunity in believing in myself and to join the awesome team. For me this award was great, but I feel that the entire experience, learning together, is even more precious.”

Nurul Amirah Mohamed, a student of Diploma in Culinary Arts who won a bronze in the open category in duck main course and a diploma for the open category in seafood main course said, “Perseverance and patience is the key to success no matter how hard it gets.  I’m glad to be part of The GUILD Culinary Team because it made me realize I’m capable of doing something beyond my comfort zone. I would like to show my appreciation by thanking Chef Eddie and Chef Hamirudin for always giving me the motivation to pursue my dreams.”
